Tender beef tripe and potatoes in a rich peanut sauce, finished with fresh herbs.
Bollo
Masa dough filled with seasoned fish, peanuts, onion and rice, wrapped in plantain leaves and steamed.
Cazuela
Green plantain and peanut thickened with seafood, seasoned through and served hot in the dish it cooked in.
Caldo de salchicha
Pork sausage, hominy, yuca and plantain in broth, with fresh cilantro over the top.
